There are two kinds of flax seed. The Golden Flax Seed and the Brown Flax Seed. My favorite is the Golden Flax Seed because of its high lignan content. Oftentimes people ask "What you do for protein if you follow a vegan or vegetarian lifestyle?" The flax seed is an excellent alternative source. Depending upon the quality of the flax seed, its protein content can range from 2-5 grams of protein per ¼ cup serving. For maximum benefits add 3 Tablespoons to ¼ cup of ground flax seed to your daily diet. Flax seed can be stored at room temperature for up to one year. For the best use of flax seeds, grind them in a coffee grinder specifically for this use. The oils from the flax seed may tend to affect the flavor of the coffee if used for both. Finely ground flax seed may be used in baking, beverages, and smoothies. When used in a breakfast smoothie, flax seed will give you the fiber, protein and calories you need to start the day.
